About Us
Meet Chef James Dalton
Meet the Chef behind Table 504, James Dalton.
James spent the first 21 years of his life growing up in central Florida. Showing interest in food and cooking from a young age, began his career at 15 years old washing dishes. Twenty-six years in hospitality has led us here to southern California and the birth of Table 504.
During the primitive years of his culinary journey, James found himself working for incredibly talented, detail oriented, and very accomplished Chefs Mark DesLauriers and James Beard nominated Jeremy Sewall.
Not only in Boston did James hit his culinary stride but also met his wife and event partner Katie. James eventually found himself catering and getting into the private chef space with MLB superstar Mookie Betts.
When Betts made the move from Boston to LA, James and his family of 5 made the move as well. After 7 seasons with Betts, James and Mookie teamed up and Table 504 was born.
